Lemon Meringue Pie

  • Zest of 2 lemons
  • Juice of lemons
  • 200ml water
  • 2tbl cornflour
  • 100ml golden castor sugar

Place all ingredients in a saucepan on a low heat until smooth and thick.

Then add the following and mix until thick.

  • 2 egg yolks
  • 1 whole egg
  • 50g butter
