Lemon Meringue Pie
- Zest of 2 lemons
- Juice of lemons
- 200ml water
- 2tbl cornflour
- 100ml golden castor sugar
Place all ingredients in a saucepan on a low heat until smooth and thick.
Then add the following and mix until thick.
- 2 egg yolks
- 1 whole egg
- 50g butter
