Mincemeat Cake

  • 3oz Margarine
  • 1oz Lard
  • 3oz Soft Brown Sugar
  • 12oz Mincemeat???
  • 2 Eggs???
  • 7oz Self Raising Flour
  • a little Milk if necessary

Grease a 7 inch tin.

Cream the margarine, lard and sugar together.

Beat in the flour.

The mixture should be moist, but this depends on how runny the mincemeat is. If necessary, add a little milk.

Bake at gas mark 3 for 10 minutes, then turn over to gas mark 2 for about 90 minutes, until the top is firm and the cake is shrinking slightly from the edge of the tin.

Keeps well.
