Scones

Ingredients:

  • 200g/8oz Self Raising Flour
  • 1 Teaspoon Baking Power
  • 75g/3oz Margarine
  • 25g/1oz Caster Sugar
  • 7 Tablespoons of milk (or 1 egg + milk)

Variations:

  • Fruit:
    • Add 75g/3oz Currants with the Sugar
  • Cheese:
    • Omit the Sugar
    • Add 1 Level Teaspoon of Mustard
    • 75g/3oz Grated Cheese
  • Wholemeal:
    • Replace 100g/4oz of the Self Raising Flour with 100g/4oz Wholemeal Flour

Method:

  1. Preheat oven to Gas 7, 425F 210C.
  2. Sieve the flour and baking powder into a bowl.
  3. Cut up the margarine and rub in.
  4. Stir in the sugar and fruit or cheese.
  5. Add milk and mix with a knife to form a soft dough.
  6. Turn out onto a floured table.
  7. Roll gently to a thickness of 1/2 inch (1.5cm).
  8. Cut into rounds using a metal cutter.
  9. Place on a baking sheet a little apart, and glaze with milk.
  10. Bake on the middle or top shelf for 12-15 minutes.
  11. Cool on a wire tray.
  12. Serve buttered.
